Damn, that guy can reach over and flash sear a steak on the snail. That's a bit insane, I hope he's got a good fire suppression system.

After searing the steak, you want to cook the steak in a broiler so that you're not just applying the heat to one side. That said, being super-hot is good for cooking steak. Good steakhouses will cook at 1200+ degrees (Even a non top-tier chain like Ruth's Chris uses 1800 degree broilers) to seal in the juices. Just because the oven is hot does not mean you can't cook a steak rare or black and blue.
