Most of my cooking is grilling, but here's a recipe that is very easy and will impress.
Easy shrimp scampi:
As much uncooked frozen or fresh shrimp as you want (say 1/2 lb or so)
Butter
Olive oil (optional)
2 cloves of fresh garlic
2-3 scallions (green onions)
a lemon
parsley (optional)
Prep the shrimp by thawing in lukewarm water and devein / detail. Chop the garlic very fine. wash and cut the scallions into fine slices (1/8-1/4"). In a 10-12" skillet, melt a half stick of butter and 2 tbsp olive oil (if you don't use the olive oil watch that your butter doesn't burn). Toss in the shrimp, garlic, and scallions and cook the shrimp until pink (opaque). Just before serving, grate some lemon rind (zest) about 1tsp. in and toss in some chopped parsley. If you have a little leftover dry white wine you can add a 1/4 cup for flavor, salt to taste.
Serve with pasta or rice of your choosing (they have that microwaveable rice in a bag now).
about 15-20 minutes total time.

bring water to boil
pour in ramen seasoning
slice the meat and put in pot
bring water back to boil
add noodle for 1 min.
add kimchee, turn off heat, let sit for 1 min.
pour into bowl and serve.
add chopped scallion for presentation.
Cajun Beggar Rice
1 part wild rice pilaf
3 parts parboiled rice
red, green, yellow and orange bell pepper sliced
red and white onion sliced
king cotton cajun sausage sliced
tony chachery's creole seasoning
olive oil/butter
after slicing the onions/peppers put them in a pan, sprinkle on some creole seasoning and saute them in olive oil or butter till the onions are starting to lightly brown. set aside in container for mixing.
saute the sausage as well, but with less oil (just enough to keep it from sticking till some cooks out of the sausage) and afterwards drain and rinse the sausage with hot water. too much fat/oil will cause faster spoilage.
bring the appropriate amount water to boil for cooking the rice, put in rice and add creole seasoning to taste (better to go with too little than too much) and stir well to mix it all together. when finished cooking put it in the container with the onions/peppers/sausage and mix carefully so as to not mash the rice. taste and if needed add extra creole seasoning and stir again.
recipe scales easily from feeding 25 to 500.

Boneless, skinless chicken breasts
Salt
Restaurant style black pepper
Onion powder
Granulated garlic
White pepper
Ground clove
Ginger
Dark brown sugar
Double strength OJ
Diced white onions
Diced green bell peppers
Diced tomatoes
Combine dry ingredients, mix thoroughly
Clean chicken
Rub chicken with rub mix
Place the chicken in a sealable dish and let sit overnight
Place chicken in an oven safe dish, cover with the rest of the rub
Pour in OJ near the edge of the dish till close to covering the chicken
Place the diced onions, peppers and tomatoes over chicken
Cover dish with foil
Cook at 300F for 25 minutes or until the chicken is 170F internally
