Dubai is a surprisingly cool town. I stayed at the JW Marriott downtown twice and the Royal Meridian in Jumeira Beach once. Both were awesome. Not quite the 7-star Al Arab (the one shaped like a ship's sail) but they also weren't $2000 a night.

I'll be at the Sheraton Jumeira Beach, not bad in itself. I've been there a few times, Dubai is a very cool city - although I'd not want to live there, just not my kind of place. I've stayed at Le Meridien Mina Seyahi (and my son has a backpack from there

), Le Meridian Airport (for being a 5-star, it's C-R-A-P), and the Shangri-La.
I have to say, the Shangri-La is quite the hotel, probably the nicest I've ever been in. The interior is all granite-surface with granite and marble flooring everywhere. Cherry and Bird's Eye Maple for the wood surfaces. All metal surfaces are gold-plated: door handles, faucets, bidet/foot washer, shower glass frames, you name it. I had a corner room on the 28th floor, had a beautiful view of the city. Buffet breakfast and 3 high-class restaurants - the Vietnamese restaurant is incredible (I think the place was there...?).
'Course, you pay for it. 2200 Dirham, or about $600-700, per night.
I'll enjoy it. There is a great little Lebanese place in the City Center mall I'm just dying to hit up again - good food, great shisha, outdoor seating.
It'll make the Nigeria trip worth it.
