This question came up during lunch at a Korean place today:
Does "kimchi" refer to all the little dishes they bring you, or just the fermented cabbage one?

All those little side dishes are referred to as "ban-chan", where both the a's are pronounced like the a's in "america"
+2 (but I'm not Korean)
It's spelled kim chee down here. It's really more of a pickled cabbage than a fermented cabbage. Kim chee and rice.....mmmmmm gooood.
Ever have kim-chee fried rice?....if your kim-chee's going bad, put rice and the kimchee in the wok with some oil or butter....mmmm...good stuff...making my mouth water...
Kimchi is the rotten spicy cabbage they bring you and it smells bad but taste good like a muthafooker. However, Ruffkimchi is something you have with some ironrice and it'll blow your socks away.
