Get a huge pot. Preferrably with a heavy lid. The pot should be about 3 ft. in diameter and be about 2 ft. deep. Get a medium sized pig still alive. Dead ones won't taste as good. Get a bunch of potatoes and some onions. Put the pot over a large fire and fill it with 6" of water.

Now for the fun part...

With a sharp knife slit the pig's neck and while it's bleeding out throw it in the pot with a bunch of potatoes and onions. Let that sucker cook for an hour or so.

Yeah, I've seen this done in person. Took everything in my body to eat it and hold it down. To refuse to eat it would have been disrespectful to the locals.
